Huangjiu Coffee + Nocello“Italian Walnut Liqueur”
Peanut tofu, layered over coconut mousse and crowned with pistachio ice cream, creates a dessert where gentleness meets fragrance.
A blend of black sugar and maple is poured over the top, weaving warmth into chill, and sweetness into a faint whisper of salt.
Texture builds in quiet layers:
silky mousse, tender simmered peanuts, and the nutty perfume of pistachio—simple on the surface, yet deeply dimensional.
Alongside it, we pour Huangjiu infused with coffee, served on the rocks, then lifted
with a touch of Italian walnut liqueur, Nocello.
Its roasted walnut and hazelnut aromas suggest both dessert and espresso at once, bridging East and West in a single glass.
Together, flavors unfold in gradients:
first the green echo of pistachio, then the deep sweetness of brown sugar and maple, followed by coffee’s gentle bitterness and the aged, savory warmth of huangjiu—a wave that moves from sweet → bitter → umami → aroma.
The pairing works by conversation, not force.
Huangjiu softens the dessert’s sweetness, Nocello amplifies the nuts, and the coffee roast resonates with the caramel tones of the syrup, leaving a quiet shadow of Shaoxing in the finish.
It feels like dessert melting into espresso—a final chord that lingers, soft, fragrant, and slightly mysterious.
